Marty Gores Little Millet Treasure Cookie- A Kimberton Café Exclusive!

A truly unique and “healthy” cookie…made with millet and topped with pine nuts.  All natural, with mostly organic ingredients....

Our own Barby the Baker has created this recipe, and makes these cookies from scratch in our KWF Kitchen. Its a cookie with substance!

A little about millet:

Millet is one of the oldest foods known to humans and possibly the first cereal grain to be used for domestic purposes. It is mentioned in the Bible, and was used during those times to make bread. Millet has been used in Africa and India as a staple food for thousands of years and it was grown as early as 2700 BC in China where it was the prevalent grain before rice became the dominant staple. It is documented that the plant was also grown by the lake dwellers of Switzerland during the Stone Age.

Today millet ranks as the sixth most important grain in the world, sustains 1/3 of the world’s population and is a significant part of the diet in northern China, Japan, Manchuria and various areas of the former Soviet Union, Africa, India, and Egypt.

Millet is full of nutrients your body needs, such as: Magnesium, Calcium, Maganese, Tryptophan, Phoshorus, Fiber, B vitamins, and Antioxidants.  The grain acts as a prebiotic to feed important microflora in your inner ecosystem. It also provides serotonin to calm and soothe your moods. It helps hydrate your colon to keep you regular. It is alkaline and is easy to digest.

A little about pine nuts:

Pine nuts can be a potent appetite suppressor. Why? They’re a good source of a polyunsaturated fat known as pinolenic acid. When you eat pine nuts, the pinolenic acid stimulates the secretion of a hormone produced by the intestines known as CCK. CCK sends the signal to your brain that you’re full which turns off your appetite.

Pine nuts are about ten to thirty-four percent protein. They’re also an excellent source of fiber as well as vitamins E, K, niacin, magnesium, and potassium.

Pine nuts are also high in monounsaturated fats, the same “heart healthy” fats that make nuts and olive oil beneficial.

Pine nuts are also high in antioxidants, protecting your cells from damage.
