A note from the creators:

I had the opportunity to visit India with Nick in the summer of 1996.  I instantly fell in love with the culture and cuisine of India, and decided then and there to pursue my culinary passion with the use of Indian spices.  Upon returning home, and still excited from the experience, I plunged head first into creating truly authentic Indian dishes only an Indian native like Nick could savor and validate.
