1 Tbsp.
3 cloves garlic, pressed
1 medium onion, chopped
1 medium green bell pepper, chopped
1 cup kale, chopped fine
1 cup broccoli, chopped, blanched 5 minutes
1 tsp. dried dill
1 tsp. dried basil
2 tsp.
2 tsp.
1 cup EdenBlend, or Edensoy original, or
Edensoy unsweetened
1 pound organic extra firm tofu, squeeze out
excess water
Preheat oven to 350 F.
Heat oil, sauté garlic and onion until onions are
translucent.
Add pepper, kale, broccoli, dill and basil.
Turn off heat, set aside
Mash tofu, add mustard and shoyu.
Mix in vegetables and EdenBlend.
Pour into quiche pan and bake for 1 hour.
Allow to set for 10 minutes after cooking.
(This is a no crust pie, but you can use any
favorite crust if you wish.)
