2 lbs Twin Oaks Plain Tofu
½ c Salt (optional)
1 ¼ c Graham Cracker crumbs
¼ c soft butter (or vegan like butter)
½ c + 2 tbsp Honey
¼ c Lemon Juice
½ c Veggie Oil (olive or almond for a twist)
2 tsp Vanilla
1 tbsp Cornstarch
Dissolve cornstarch in 2 tbsp water. Using a blender or food processor combine all ingredients, except graham cracker crumbs, butter and 2 tbsp honey. Blend untill creamy, may have to do in two batches. For Graham Cracker crust : crush crackers in blender to make 1 ¼ cups crumbs. Mix crumbs with 2 tbsp honey and softened butter, then press into 9 inch pie pan. Pour in creamy filling and back for 40 minutes or until top is golden brown and cake has jelled. Let cool before serving or chill and top with favorite fresh fruit
