“I started working for a farm store in Maryland – most of their produce was grown on site. I wanted to become more knowledgeable in organic grown foods and I got into fermenting from that. It was pretty easy for me because I had a chemical engineering background, so it wasn’t scary for me to think of leaving food out for long time. I found out I was good at it, so I started the company back in 2008. Kimberton Whole Foods has always been a big part of what we do,” says Scott.


“Tonics are concentrated,” says Scott. Lactobacilli eat the naturally occurring starches and sugars in the raw, organic veggies and turn them into lactic acid, preserving everything perfectly, in a pristine raw state. The lactic acid fermentation keeps nutrients intact and has been shown to increase the amount of Vitamin C and digestive enzymes present.  It also makes everything probiotic, because the ingredients are never heated.   1. Hello! Are your kraut recipes subjective to different outcomes due to ingredients used? I purchased two identical rainbow kraut containers, and one kraut was darker in color than the other. 🙂
