What You’ll Need
- ½ cup Rizo Bros Cotija Cheese, grated
- 16 oz frozen Corn, thawed (or fresh corn, cooked and sliced off the cob)
- 1 tsp Chili Powder
- 2 Tbsp Mayonnaise
- 1 tsp Lime Juice
- 1 Tbsp Cilantro
- 6 Hot Dogs
- 6 Hot Dog Buns
- 2 tsp Hot Sauce
- Salt and Pepper (to taste)
In a mixing bowl, combine corn, ¼ cup Rizo Bros Cotija Cheese, chili powder, lime juice, cilantro, hot sauce, salt and pepper.
Grill Hot Dogs and place in a toasted bun of your choice. Top hot dogs with the street corn mixture and garnish with additional cotija cheese and cilantro.
