This simple, seasonal mocktail recipe features a flavorful Rosemary Cinnamon Simple Syrup and cinnamon sugar on the rim of the glass. Sweet and spiced, and perfect for the season! The syrup recipe is versatile and would make a nice addition to cocktails and sodas, too.
What You’ll Need
For the Cinnamon Rosemary Simple Syrup:
- 1 cup sugar
- 1 cup water
- 2 cinnamon sticks
- 4 sprigs fresh rosemary
For Mocktail:
- 2 tbsp sugar
- 2 tbsp ground cinnamon
- 1 lemon slice
- 2 cups apple cider or apple juice
- ice
Optional Garnish and Add-Ins:
- Apple slices
- Cinnamon sticks
- Rosemary sprigs
- Star anise
Instructions
To make Cinnamon Rosemary Simple Syrup: bring first 4 ingredients to a gentle simmer in a small sauce pot. Remove from the heat, cover, and let sit 5 to 10 minutes, to steep. (The longer it steeps, the stronger the flavor.) Strain out rosemary and cinnamon sticks, and set aside.
To assemble drink: Combine cinnamon and sugar in a small shallow dish. Rub lemon on the rims of your glasses, then dip in the cinnamon sugar to coat. Fill each glass with ice. Combine 1-2 tbsp of Cinnamon Rosemary Simple Syrup with 1 cup of apple cider in each glass and stir gently. Optional: Top with sparkling water for a little fizz.
