Gluten-Free Heirloom Apple Muffins

With Autumn’s arrival we also see a steady parade of heirloom apples streaming into our stores.  Over the next month we’ll be sharing recipes that make the most of the different varieties you’ll find available on our shelves!  Today’s muffin recipe is sweet, tart, and tasty at breakfast or as an after school snack.

Recipe yields 12 muffins.

WHAT YOU’LL NEEDHeirloom Apple Muffin Recipe

  • 2 King David (or other tart heirloom) apples, peeled, quartered & chopped
  • 4 cups Bob’s Red Mill One-to-One Gluten-Free Flour
  • 1 cup raw sugar
  • 1 Tbsp baking powder
  • 1 Tbsp cinnamon
  • 1 tsp Himalayan pink salt
  • 1 tsp nutmeg
  • 3 large eggs
  • 1/2 cup safflower oil
  • 1/4 cup lemon juice
  • 1 cup plain yogurt (or milk, or non-dairy milk)

TOPPING

  • rolled oats
  • raw sugar

PREPARATION

Mix dry ingredients in a large bowl, forming a well in the center.  Combine wet ingredients in well, then fold in dry ingredients and apples.  Scoop into paper lined muffin tin, and sprinkle the tops with oats and sugar.  Bake 18-20 mins at 350°.  Remove from oven, allow to cool in tin for 1-2 minutes, then remove promptly.  Serve warm.
