Recipe yields 4 servings.

WHAT YOU’LL NEED

  • 1 lb ground lamb or beef
  • 3/4 cup Maya Kaimal Madras Curry, plus more as needed
  • 1 cup dry breadcrumbs
  • 1/4 teaspoon salt

PREPARATION

Pre-heat grill to medium-high.

In a large mixing bowl, combine the ground lamb with 3/4 cup Madras Curry, bread crumbs, and salt. Mix until well combined.

Divide the meat mixture into 16 balls. Roll each ball into a 3-inch long by 1-inch wide tube. Slide a soaked bamboo skewer lengthwise through each tube. Compress meat with your hand to maintain tube shape and make sure meat is secure to skewer.

Oil grill grates. Place meat skewers across the grill grates and cook, without moving, for about 5 minutes. The meat will release easier when itโ€™s had a chance to char a bit. Gently lift and turn each skewer using a thin metal spatula. We do not recommend turning with tongs as they can tear these tender meats.

Baste ground lamb skewers with additional Madras Curry. Continue grilling, turning and basting until meat is cooked through, about 4 more minutes.

Serve skewers hot garnished with fresh cilantro and Mayaโ€™sย Raitaย andย Cucumber Tomato Saladย on the side. Of course, warmed naan or pita bread will also be good.
