Citrus season is in full swing, and we are making the most of it! From sweet desserts, to savory entrees, to light and fresh recipes like this Asian Style Citrus Salad – there are endless ways to enjoy these bright and tangy fruits. This recipe comes to us from plant-based creative genius, Skylar Sokolowski of Enlightened Appetite. She uses clementines in this version, but feel free to swap in your favorite citrus of choice, and play with the seasonings to suit your tastes. Let us know what you think in the comments below.
What You’ll Need
- 1 head of red leaf lettuce (chopped, about 3 cups)
- 1/2 cup cilantro (chopped)
- 1/4 cup green onion (chopped)
- 1/4 cup sliced almonds
- 1/2 cup purple cabbage (chopped)
- 2 clementines (peeled and diced)
- 1 tbsp sesame seeds
- 3 tbsp olive oil
- 1/2 tsp himalayan salt (or to taste)
- 1 tbsp maple syrup
- 3 tbsp lime juice
In a large bowl, add the prepped lettuce, cilantro, green onion, almonds, cabbage, and clementines. In a small mixing bowl, whisk together the dressing ingredients. Pour the dressing over the salad ingredients and toss. Garnish with sesame seeds.
