Over the years, we’ve perfected this salad of hearty greens, complimented by a tangy and spicy dressing – and our customers have requested the recipe. Here it is: our famous Kale Caesar Salad. We think it’s the perfect side for lunch or dinner, or a meal all on its own when topped with grilled chicken or baked tofu. We hope you love it as much as we do!
Serves 2
What You’ll Need
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 tsp hot sauce
- 4 tbsp vegenaise (or mayonnaise)
- 2 tsp dijon mustard
- 1 tsp minced garlic
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 head of kale, stemmed and torn into bite-sized pieces (curly or lacinato)
- 1/2 of a small red onion, julienned
- 6 each grape tomatoes, halved & quartered
Instructions
Whisk first 8 ingredients together in a medium-sized bowl until smooth. Add kale and use (clean!) hands to massage the kale along with the dressing, to soften it. Add the onion and tomato and toss to combine.
This looks amazing! I love Caesar salads but since I am dairy free, I always have to skip it! Looking forward to making this at home!!
