Kale Caesar Salad

Over the years, we’ve perfected this salad of hearty greens, complimented by a tangy and spicy dressing – and our customers have requested the recipe. Here it is: our famous Kale Caesar Salad. We think it’s the perfect side for lunch or dinner, or a meal all on its own when topped with grilled chicken or baked tofu. We hope you love it as much as we do!

Kale Caesar Salad Kimberton Whole Foods

Serves 2

What You’ll Need

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp hot sauce
  • 4 tbsp vegenaise (or mayonnaise)
  • 2 tsp dijon mustard
  • 1 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 head of kale, stemmed and torn into bite-sized pieces (curly or lacinato)
  • 1/2 of a small red onion, julienned
  • 6 each grape tomatoes, halved & quartered

Instructions

Whisk first 8 ingredients together in a medium-sized bowl until smooth. Add kale and use (clean!) hands to massage the kale along with the dressing, to soften it. Add the onion and tomato and toss to combine.
