Blended Citrus Fruit Salad

Citrus fruit is commonly associated with summer dishes and recipes because of its refreshing juicy texture, and bright tangy flavors, but did you know that citrus is in season during the winter months?  Combine citrus with other foods, such as spinach, to pack an extra nutritious punch!

Choose a variety of your favorite citrus fruits for this bright and flavorful recipe.

  • 1 cup of segmented varieties of citrus
  • 5 ounces baby spinach
  • 1/4 red onion, thinly sliced
  • 4 tablespoons of any orange citrus juice
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt and pepper
  • Pomegranate seeds
  • Pepita seeds (pumpkin seeds)

Toss citrus segments, spinach and red onion together in a large bowl.  Whisk together citrus juice, oil, salt and pepper in a separate bowl then drizzle over salad and toss to coat well.  Top with pomegranate and pepita seeds.  You can also add avocado or chopped chicken to make it a main dish.
