Try this Apple and Cranberry Tuna Salad for dinner tonight! The crisp Fuji apple lends great texture, and the cranberries give it just enough sweetness. You can experiment with adding a touch of Dijon mustard, or some chopped walnuts to this recipe. Let us know what you think in the comments below!
- Combine 3/4 cup chopped Fuji apple and 1 tbsp lemon juice in a medium bowl, mix to coat.
- Add 1 finely diced shallot, 1/3 cup dried sweetened cranberries, 2 tbsp minced fresh dill, and 2 5-oz cans (drained) tuna, and mix.
- Gently fold in 1/2 cup mayonnaise until ingredients are mixed evenly. Season to taste with salt and pepper.
- Serve on a wrap or on top of salad greens. Enjoy!
