  1. Slice and toast bread.
  2. Spread with a generous layer of chevre. (any type will do!)
  3. Top with sliced heirloom tomatoes, then drizzle with olive oil and local honey, and sprinkle with salt, pepper, and fresh thyme leaves.
  4. Serve alongside a big salad made with fresh greens, tossed with oil and balsamic vinegar. Enjoy!
