Real Meals: Dairy-Free Smothered Burritos

This week, enjoy a satisfying, comforting meal: Dairy-Free Smothered Burritos. Easily scale this meal up or down, and it’s perfect for a single person or a large family!

Real Meal Smothered Burrito Kimberton Whole Foods


  1. Heat burrito(s) according to package directions, either in the oven or microwave. For second half of cooking, spoon 2-3 tbsp enchilada sauce over each burrito.
  2. Meanwhile, warm some queso in the microwave, in a microwave-safe dish. (Optional: it is also delicious cold!) When burrito is done cooking, spoon some queso over each burrito. Top with chopped onion and some fresh cilantro.
  3. Serve alongside some sliced avocados and fresh salad greens, drizzled with olive oil and sprinkled with salt.
