Our weekly Real Meal offers you a healthy dinner idea that you can get on the table quickly, using our favorite organic and all-natural products. This week, we’re taking advantage of the apple harvest with this one-dish meal: Roasted Potatoes and Apples with Chicken Sausage. Enjoy!
- Preheat oven to 425F. Cut 1 lb potatoes into bite-sized pieces, and place in a baking dish. Drizzle with oil, season with salt and pepper, and toss to coat. Roast 20 minutes.
- Remove baking dish from the oven and add 2 apples and 1 onion, cut into bite-sized pieces. Add chicken sausage, cut into ½ inch slices. Season with 2 tbsp apple cider vinegar, ½ tsp ground mustard, and 1 tbsp honey. Toss to combine and roast an additional 30 minutes, or until potatoes and apples are tender.
- Optional: Roast with fresh sprigs of thyme for additional flavor.
