Real Meals: Salmon Burger with Goat Cheese and Lemon Mayonnaise

  1. Prepare Goat Cheese and Lemon Mayonnaise by combining equal parts crumbled goat cheese and mayonnaise. Add lemon juice, chopped fresh parsley, salt, and pepper to taste.
  2. Heat 2 tsp oil in a grill pan or saute pan over medium-high heat. Dust Wild for Salmon burgers (thawed) with a generous shake of Cajun seasoning on each side. (Use a ready-made Cajun mix, or mix up your own!) Grill until cooked through, about 2-3 minutes on each side.
  3. Serve burgers on toasted buns, topped with a generous serving of the Goat Cheese Mayo, lettuce, sliced tomato, and sliced red onion.
