Real Meals: Smoked Salmon on Crispy Potatoes

This week’s recipe is Smoked Salmon on Crispy Potatoes. This dish is rich and delicious enough to serve to company, but can be put together quickly on a weeknight.

  1. Boil potatoes until just tender, about 15 minutes. Let cool slightly. Crush each potato to flatten slightly.
  2. Heat oil in a flat skillet over medium-high heat. Cook potatoes until browned and crisp, about 4 minutes per side. Season well with salt and pepper.
  3. Meanwhile, steam or boil the green beans, then set aside and season with salt and pepper.
  4. To serve: Top the crispy potatoes with some sour cream, smoked salmon, and freshly chopped dill. Serve green beans on the side, with a squeeze of fresh lemon juice, if desired.
