Red Lentil Curry

Our Kimberton Whole Foods Recipe Developer, Colin Brett, recently shared this customer and staff favorite!

Recipe makes 4-6 side dishes

WHAT YOU’LL NEEDKWF Red Lentil Curry

  • ¾ cup diced onions
  • ¾ cup diced celery
  • ¾ cup diced carrot
  • ¾ cup diced tomato
  • spice blend (see below)
  • 1 cup red lentils
  • 2 cups coconut milk
  • ½ cup water
  • 2 teaspoons of fresh ginger, grated
  • 3/4 teaspoon of olive oil
  • 1 tablespoon of fresh chopped parsely

Spices

  • ¼ tablespoon curry
  • ¼ tablespoon cumin
  • ¼ tablespoon coriander
  • 1/8 tablespoons of turmeric
  • ¼ tablespoons of cardamom
  • ½ tablespoons of fresh ginger, grated
  • 1 teaspoon salt
  • 1 ½ teaspoon of lemon juice

PREPARATION

Sauté onions, celery, carrots, and tomatoes with spices for 10 minutes. Next in large pot mix the sautéed veggies with red lentil, coconut milk, water, ginger and olive oil and let simmer on low heat for an hour and a half. Make sure to keep stirring so that the lentils do not sink to the bottom and stick. Cover and let sit for 30 minutes to cool. Top with fresh chopped parsley.
