What You’ll Need
For the noodle bowl:
- 1ย packet Lotus Foods Millet & Brown Rice ramen
- 1ย cupย trimmed and chopped asparagus
- 1/4ย cupย thinly sliced shallots
- 1ย cupย deseeded cucumber half-moons
- 1/4ย cupย thinly sliced spring onions
- 1ย cupย trimmed and chopped sugar snap peas
- 1ย cupย julienned carrot
- 1ย cupย fresh cilantro
- 1ย cupย fresh Thai basil
- 1ย cupย fresh mint
- 2-3ย tbspย crushed peanutsย to serve
- 1-2ย tspย chopped chiliย to serve (optional)
For the almond butter dressing:
- 1/4ย cupย smooth almond butter
- 3ย tablespoonsย fresh lime juice
- 1ย tbspย maple syrup
- 1/2ย tablespoonย rice vinegar
- 1 1/2ย tbspย soy sauce or tamariย more to taste
- 1ย teaspoonย Sriracha or other hot sauce
- 2ย teaspoonsย grated fresh ginger
- 1ย garlic cloveย grated
- 2ย tbspย water
