Coffee Chia Seed Pudding

Coffee Chia Seed Pudding Kimberton Whole Foods

Serves 1-2

What You’ll Need

  • 1/2 cup chia seeds
  • 1/2 cup coffee, chilled
  • 1/2 cup coconut milk, canned
  • 1 tsp vanilla
  • 1 tbsp maple syrup (optional)

Instructions

Let chia seeds soak in all ingredients for about 2 hours, or until thick and gel-like. Served topped with fresh or frozen fruit, granola, cooked oatmeal, or any other topping you enjoy.

Notes: You may substitute any milk for the coconut milk, if desired.
