Salted Maca Cookies

Maca is an adaptogen, meaning that it is thought to help the body resist stress and create balance. Native to South America, maca is part of the cabbage family and in appearance closely resembles a radish or parsnip. What You’ll Need

  • 1 & 3/4 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 cup almond milk (or other plant milk)
  • 1/4 cup melted coconut oil
  • 1/2 tsp Himalayan salt (plus extra for sprinkling on top)
  • 3 tbsp maca powder
  • 1/2 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1 2.5 oz chocolate bar crushed
  • 1 cup chopped dates

Instructions

Preheat oven to 250F.

Combine the almond flour, coconut sugar, almond milk, coconut oil, salt, maca powder, baking soda, and apple cider vinegar to form a dough.

Fold in the crushed chocolate bar and dates.

Scoop about 3 tbsp of dough at a time on to a greased baking sheet. Press the dough into cookie shape.

Bake for about 20-25 minutes or until the cookies are firm, but still soft on the inside.
