Real Meals: BBQ Chicken Nachos

Our weekly Real Meal offers you a healthy dinner idea that you can get on the table quickly, using our favorite organic and all-natural products. This week’s inspiration is BBQ Chicken Nachos! This recipe can easily be scaled up to serve a crowd.

  1. Heat oven to 375°F. Pour ½ cup barbecue sauce over 1 lb Bell & Evans organic chicken* breasts in a greased baking dish.
  2. Bake 25 min. or until chicken is cooked through. Allow the chicken to rest until cool enough to handle, then dice into small pieces.
  3. Turn oven up to 400°F . Spread Late July corn tortilla chips on a sheet pan. Top with diced chicken and shredded cheese. Place pan in the oven and bake until cheese is melted, about 8-10 minutes.
  4. Top with chopped tomatoes, onions, cilantro, sour cream, or whatever other toppings you like! Serve with a green salad to round out this meal.

*TIP: Substitute chicken with black beans for a vegetarian option. Simply skip the first step and toss black beans with BBQ sauce before topping chips.
