3 cups organic seedless watermelon, cut in 1″ cubes
6-7 oz Breezy Meadows Feta Cheese , cut in 1/2″ cubes
1 small red onion, thinly sliced
1-2 cups True Leaf Micro Greens
2 tbsp Olio Beato Organic Extra Virgin Olive Oil
1 tbsp red wine or balsamic vinegar
Himalayan salt and coarse ground black pepper, to taste
Combine melon, feta, onion slivers, and micro greens in a bowl. Mix oil and vinegar, pour over salad mixture and gently toss. Salt and pepper to taste.
