Our weekly Real Meal offers you a healthy dinner idea that you can get on the table quickly, using our favorite organic and all-natural products. This week’s inspiration is a bright and lemony pasta entrée: Rotini with Tuna, Lemon, and Olives. (Feel free to substitute any shape pasta that you like!)
Have it on your table in just 4 steps!
- In a large bowl, flake 2 (5oz) cans of Wild Planet Albacore Wild Tuna (and juices) into bite-sized pieces.
- Cook 1/2 lb of pasta according to package directions, drain.
- Meanwhile, heat 1/4 cup olive oil in a medium sauté pan over medium heat. Add 1 thinly sliced red onion and cook, stirring frequently, until tender and lightly browned. Stir in the zest of one lemon, plus 2 tsp lemon juice, 4 tsp minced garlic, 2 tsp capers, 12 kalamata olives, and tuna with juices. Heat through and season with salt and pepper to taste.
- Toss the tuna sauce with the hot cooked rotini and sprinkle with freshly chopped parsley. Optional: Serve with steamed broccoli.
