This week, try this One-Pot Pasta with Chicken and Spinach! Look for local spinach at all stores, arriving this week from Lancaster Farm Fresh Cooperative.
- Heat 1 tbsp olive oil in a large, deep skillet or saute pan over medium heat. Add 1 pound of boneless chicken breast, cut into bite-sized pieces. Season with salt and pepper, and cook, stirring, until no longer pink. Remove chicken from the pan.
- Add 1 tbsp olive oil to the same pan, then add 3 cloves minced garlic. Add 2 ½ cups chicken broth, 1 small can of fire-roasted tomatoes, and 8oz uncooked penne pasta. Cover and bring to a simmer, adjusting heat as necessary. Cook for about 10-15 minutes, or until pasta is cooked through.
- Return cooked chicken to the pot along with a few handfuls of roughly chopped fresh spinach. Add a splash of half and half, if you like, for creaminess. Continue cooking, uncovered, until spinach is wilted and sauce reaches desired consistency. Season generously with salt, pepper, and red pepper flakes.
