Real Meals: Creole Turkey Patties

  1. Heat a saute pan over medium heat. Add some oil, then 2 stalks celery (diced), 4 scallions (diced), 4 cloves garlic (minced), and salt and pepper and cook for 5 minutes, until soft. Transfer to a large bowl to cool.
  2. Meanwhile, mix ¾ cup plain yogurt with 1 tsp Creole spice mix and some minced green onion. Season with salt and a squeeze of lemon juice. Set aside.
  3. Add to the mixing bowl with celery, onion and garlic: 1 lb dark ground turkey, 2 eggs, ¾ cup panko bread crumbs, 1 tbsp Creole spice mix, ½ tsp cayenne (optional), 1 tbsp Dijon, and salt & pepper. Mix together and form into mini patties, about 2 inch in diameter.
  4. Add some oil to a large saute pan and heat over medium high heat. Cook patties in two batches, for about 2-3 minutes per side or until cooked through.
  5. Once all patties are cooked, drizzle with Creole yogurt and serve with more chopped scallions.
  6. Serve with your favorite cooked grain (like brown rice or farro) and a big green salad.
