Leftovers would be wonderful on top of a salad or served in a pita.
- Heat a saute pan over medium heat. Add some oil, then 2 stalks celery (diced), 4 scallions (diced), 4 cloves garlic (minced), and salt and pepper and cook for 5 minutes, until soft. Transfer to a large bowl to cool.
- Meanwhile, mix ยพ cup plain yogurt with 1 tsp Creole spice mix and some minced green onion. Season with salt and a squeeze of lemon juice. Set aside.
- Add to the mixing bowl with celery, onion and garlic: 1 lb dark ground turkey, 2 eggs, ยพ cup panko bread crumbs, 1 tbsp Creole spice mix, ยฝ tsp cayenne (optional), 1 tbsp Dijon, and salt & pepper. Mix together and form into mini patties, about 2 inch in diameter.
- Add some oil to a large saute pan and heat over medium high heat. Cook patties in two batches, for about 2-3 minutes per side or until cooked through.
- Once all patties are cooked, drizzle with Creole yogurt and serve with more chopped scallions.
- Serve with your favorite cooked grain (like brown rice or farro) and a big green salad.
