Real Meals: Franks and Beans with Jalapeno Cheddar Cornbread

This week’s meal is good old fashioned comfort food: Franks and Beans with Jalapeño Cheddar Corn Bread – made fresh in our kitchen! Just grab a package of beef franks, a couple cans of beans, and a few pantry staples, and you can have it on your table in 4 simple steps.

  1. Heat a large heavy skillet over medium heat. Add a drizzle of oil, then 1 diced onion. Cook until tender, adjusting heat as needed to prevent burning – about 10-15 minutes.
  2. Next, add Garrett Valley beef hot dogs, sliced into bite-sized pieces. Stir until just starting to brown.
  3. Add 2 cans of drained and rinsed beans (Great Northern or Cannellini will do), 1 tbsp mustard, 1/2 tsp garlic powder, 3/4 cup ketchup, 1 tbsp white wine vinegar, 2 tbsp brown sugar, 1 tbsp worcestershire sauce. Adjust seasonings as needed, to taste. (add a splash of broth or water if it needs thinning)
  4. Bring to a simmer and continue stirring until sauce and ingredients are warmed through. Serve with a generous slice of jalapeno cheddar cornbread.
