Real Meals: One Pot Chili Mac

This week, try this crowd-pleaser: One Pot Chili Mac, made with Thousand Hills ground beef and Annie’s mac and cheese. Loved by children and adults, alike!

  1. Preheat oven to 450°F.
  2. In a large nonstick pot, brown 1 lb ground beef in a drizzle of oil. Add 2 (6oz) packages of Annie’s mac and cheese (including cheese sauce packets), 1 can black bean soup, 1 can diced tomatoes, ¾ cup water, and 1 cup shredded cheddar or jack cheese.
  3. Cover and cook on stovetop over medium-high heat, stirring every few minutes, until noodles are nearly cooked through. Adjust consistency with water, as needed. Sprinkle with 1 additional cup of shredded cheese.
  4. Transfer to oven, cooking 5-7 minutes, or until cheese is melted and bubbly. Top with chopped cilantro and sliced green onions, if desired.
  5. Serve alongside your favorite local-grown greens!
