What You’ll Need
Filling
- 2Β peachesΒ chopped
- 2Β cupsΒ blueberries
- 1-2Β tbspΒ coconut sugar
- 1Β tspΒ cinnamon
Oatmeal Base
- 2Β cupsΒ dry oats
- 1Β eggΒ beaten
- 1/2Β cupΒ applesauce
- 3/4Β cupΒ milk
Streusel Topping
- 1/2Β cupΒ dry oats
- 1/2Β cupΒ chopped pecans
- 2Β tbspΒ coconut oilΒ melted
- 1/2Β tbspΒ cinnamon
- 1-2Β tbspΒ coconut sugar
Instructions
Preheat oven to 350 and coat a 9×9 pan with cooking spray/oil/butter.
Fruit: Combine filling ingredients in a saucepan and place over medium-low heat, let simmer for 10-15 minutes, stirring occasionally and set aside.
Oatmeal: While fruit is simmering, add oatmeal in a large bowl. Add egg, applesauce and milk in a separate bowl and mix well. Add wet mixture to oatmeal and mix well, spread evenly on pan.
Add fruit mixture on top of oatmeal.
Topping: Mix topping ingredients together and spread evenly on top of fruit mixture.
Bake for 30 minutes or until done.
