Blueberry Peach Baked Oatmeal

A sweet and comforting breakfast to celebrate summer’s bounty! Blueberry Peach Baked Oatmeal is a hearty breakfast that tastes like dessert. What You’ll Need


  • 2ย peachesย chopped
  • 2ย cupsย blueberries
  • 1-2ย tbspย coconut sugar
  • 1ย tspย cinnamon

Oatmeal Base

  • 2ย cupsย dry oats
  • 1ย eggย beaten
  • 1/2ย cupย applesauce
  • 3/4ย cupย milk

Streusel Topping

  • 1/2ย cupย dry oats
  • 1/2ย cupย chopped pecans
  • 2ย tbspย coconut oilย melted
  • 1/2ย tbspย cinnamon
  • 1-2ย tbspย coconut sugar


Preheat oven to 350 and coat a 9×9 pan with cooking spray/oil/butter.

Fruit: Combine filling ingredients in a saucepan and place over medium-low heat, let simmer for 10-15 minutes, stirring occasionally and set aside.

Oatmeal: While fruit is simmering, add oatmeal in a large bowl. Add egg, applesauce and milk in a separate bowl and mix well. Add wet mixture to oatmeal and mix well, spread evenly on pan.

Add fruit mixture on top of oatmeal.

Topping: Mix topping ingredients together and spread evenly on top of fruit mixture.

Bake for 30 minutes or until done.
