In a large saute pan over medium-high heat, add 2 tbsp oil.

Season 4 4-6-oz fillets of rockfish (thawed, patted dry) with salt and pepper and sear for 3 to 4 minutes on each side.

Add 2 sprigs of fresh thyme and the juice of 1/2 a lemon and baste the fish with the sauce. Remove the rockfish from the pan to a serving platter.

Add another tbsp of oil to the pan and stir in 1 1/2 cups of quartered and cored heirloom tomatoes, 1 tsp chopped garlic, and the juice of 1/2 a lemon. Cook for 2 minutes and then add 2 tbsp chopped parsley. Stir to combine and serve on top of the fish.

Serve with a fresh green salad.
