Real Meals: Beef and Sweet Potato Skillet

This week’s meal is a Beef and Sweet Potato Skillet, seasoned generously with chili powder and cumin. Serve it as is, or enjoy with rice and a side of refried beans.   1. In a large skillet, heat 1 tbsp oil over medium heat. Add the 1lb ground beef and cook, breaking apart with a spoon. Season with salt and pepper. Once the beef is browned and cooked through, remove from the pan and set aside.
  2. To the same pan, add 2 tbsp oil and 4 cups diced sweet potato. Season with chili powder, garlic powder, cumin, salt, and pepper, to taste, and stir well. Add 1 can diced tomatoes and about ยผ cup water. Cover and reduce to a simmer, and cook until potatoes are tender. (add more water as needed)
  3. Uncover, add the beef and 1 cup fresh spinach, and cook until spinach is wilted. Season with lime juice, to taste, and serve with sliced avocado, fresh cilantro, chips, tortillas, and/or fresh salsa.
