- Prepare Celebration Roast according to package directions.
- In a large heavy-bottomed pot over medium heat, saute 1 cup diced onion, 1 cup diced celery, and 3 cups diced sweet potatoes in oil or butter. Season with salt and pepper, chopped sage, and chopped thyme. Add 1 cup of broth and cook until potatoes are just tender.
- Add stuffing mix and another cup of broth, then transfer stuffing into a slow cooker and cook on low for 3-4 hours. Serve with Celebration Roast.
