This week, we were inspired by this mouthwatering recipe for Cara Cara Orange Chicken, which comes together very quickly but packs a ton of flavor. (Don’t have Cara Cara oranges? Simply substitute navel oranges!)
- In a medium bowl, whisk together ½ cup freshly squeezed Cara Cara orange juice, ½ tsp orange zest, 1 tbsp chili garlic sauce (optional), ¼ cup chicken stock, 2 tbsp soy sauce, 1 tbsp sugar, 2 tsp rice wine vinegar, and 2 tsp cornstarch.
- Heat some oil in a large skillet or wok over medium-high heat, and add 2 cloves minced garlic. Cook for about 30 seconds, then add 1 lb (cubed) chicken and heat until just cooked through.
- Add orange sauce to skillet and toss to coat. Cook for a few more minutes to thicken and heat the sauce. Add salt to taste.
- Serve with steamed broccoli and your favorite rice, and garnish with sliced scallions.
