- Preheat oven to 400°F.
- Toss 5 bone-in, skin-on whole chicken legs with 3 tbsp olive oil, 2 tsp chopped fresh parsley, 1/2 tsp garlic powder and 1/4 tsp paprika. Season generously with salt and pepper. Arrange in a baking dish.
- Bake 40-45 minutes or until juices run clear and chicken reaches 165°F.
- Broil 1 minute more to crisp the skin, if desired.
- While chicken cooks, combine 1/2 small red onion (sliced), 2 avocados (cubed), and 2 mangos (cubed) in a medium bowl. Season with 1 tbsp lime juice, a drizzle of olive oil, and salt and pepper, to taste. Serve salad along with chicken.
