Real Meals: Chicken Nuggets with Mashed Cauliflower

Real Meal Chicken Nuggets Kimberton Whole Foods


  1. Preheat oven to 375 F.
  2. Roughly chop 1 head of cauliflower into small bite-sized pieces. Place into a heavy pot and cover with water; boil until tender. Once tender, drain cauliflower, reserving ¼ cup of cooking liquid. Using a food processor or an immersion blender, blend cauliflower with 3 tbsp butter (or non-dairy butter) and a generous dash of salt. Thin with reserved cooking liquid, as needed.
  3. Meanwhile, bake chicken nuggets according to package directions.
  4. Serve nuggets and mashed cauliflower alongside some fresh salad greens and your favorite dressing.
