Our weekly Real Meal offers you a healthy dinner idea that you can get on the table quickly, using our favorite organic and all-natural products. (And featuring products from our Weekly Real Deals!) This week, enjoy Chicken Nuggets with Mashed Cauliflower for a twist on a childhood classic.
- Preheat oven to 375 F.
- Roughly chop 1 head of cauliflower into small bite-sized pieces. Place into a heavy pot and cover with water; boil until tender. Once tender, drain cauliflower, reserving ¼ cup of cooking liquid. Using a food processor or an immersion blender, blend cauliflower with 3 tbsp butter (or non-dairy butter) and a generous dash of salt. Thin with reserved cooking liquid, as needed.
- Meanwhile, bake chicken nuggets according to package directions.
- Serve nuggets and mashed cauliflower alongside some fresh salad greens and your favorite dressing.
