  1. Preheat oven to 400°F.
  2. Toss 2 bone-in, skin-on whole chicken legs with 1 tbsp olive oil and 1/4 tsp garlic powder. Season generously with salt and pepper. Arrange in a baking dish.
  3. Bake 30-40 minutes, or until juices run clear and chicken reaches 165°F. Set aside chicken to rest for 5-10 minutes.
  4. Meanwhile, toss together 1/2 cup fresh blueberries, corn kernels scraped from 1 ear of corn (raw or cooked), 4 fresh strawberries (diced), 1/4 cup chopped fresh cilantro, 1 tbsp minced jalapeno pepper, plus lime juice, salt, and pepper, to taste.
  5. Serve chicken topped with fresh salsa. For a heartier meal, serve chicken over rice or quinoa.
