This week’s recipe, Vegan Sausage and Collard Greens, is full of plant protein and vitamin-rich dark leafy greens. Serve with a side of vegan mashed potatoes for a completely plant-based comfort-food meal!
- Heat 2 tbsp oil in a large skillet. Add 4 cloves minced garlic, saute for 30 seconds.
- Add 1 15-oz can of diced tomatoes and 1 large bunch of collard greens (chopped). Season with salt, reduce heat to low, cover, and cook for about 30 minutes, or until tender.
- Season with 2 tbsp soy sauce and 1 tsp smoked paprika, to taste, just before serving.
- Meanwhile, sear Beyond Sausages in a large flat skillet or in a grill pan, until crispy and browned on the outside, and warmed throughout. Enjoy!
