Flourless Peppermint Brownies

Bring these to your next holiday gathering! This seasonal recipe comes to us from the masters of flourless baking: Bethany and Rachel DiCarlo of Athletic Avocado. Flourless Peppermint Brownies are super simple to make, plus they’re gluten-free, grain-free, dairy-free, and paleo – with a vegan option, too! Flourless Peppermint Brownies Kimberton Whole Foods

Makes 9 brownies.

What You’ll Need:

  • 1 cup almond butter
  • 1/4 cup pure maple syrup
  • 1 egg, beaten (or substitute one flax egg)
  • 1/4 cup coconut oil , melted
  • 2 tsp. peppermint extract
  • 1/3 cup cocoa powder
  • 1/2 tsp. baking soda
  • 4 candy canes, crushed

Topping (Optional)

  • melted chocolate (look for a dairy-free chocolate for vegan option)
  • crushed candy canes

Instructions:

Preheat oven to 350 degrees F.

Combine first 5 ingredients together in a large bowl until mixture is smooth. Add in cocoa and baking soda and mix well.  Stir in crushed candy canes.

Coat a baking pan with coconut oil or cooking spray and spoon in batter. Smooth out the top so batter is even throughout.

Bake for 25-30 minutes, or until done.

Let cool, then drizzle on melted chocolate and top with crushed candy canes. Slice into 9 brownies. Enjoy!
