  1. Warm quiche in a toaster oven or conventional oven, if desired.
  2. Steam or boil green beans and potatoes until tender.
  3. In a jar or bowl, combine minced garlic, dijon mustard, a splash of apple cider vinegar, a drizzle of olive oil, and salt and pepper to taste. While beans and potatoes are still warm, toss them with the vinaigrette, to taste.
  4. Serve quiche with the warm green beans and potatoes. Optional: top with freshly chopped parsley.
