Real Meals: Sweet Corn Mac and Cheese

Our weekly Real Meal offers you a healthy dinner idea that you can get on the table quickly, using our favorite organic and all-natural products. This week’s inspiration is easy to put together using Annie’s boxed mac and cheese. The addition of fresh, seasonal vegetables adds flavor and nutrition to this family favorite.

Real Meal Kimberton Whole Foods Mac and Cheese

 


  • In a medium sauté pan over medium-high heat, warm 1 tablespoon olive oil. Add 1 ear sweet corn (removed from cob), 1 yellow squash (diced) and 1 cup cherry tomatoes, and sauté until lightly browned (10-12 minutes).
  • Meanwhile, prepare mac and cheese according to package directions.
  • Combine mac and cheese with sautéed vegetables. Portion into individual bowls and top with sliced peaches, torn fresh basil and a sprinkling of pistachios.
