This week’s inspiration is easy to put together using Annie’s boxed mac and cheese. The addition of fresh, seasonal vegetables adds flavor and nutrition to this family favorite.
- In a medium sauté pan over medium-high heat, warm 1 tablespoon olive oil. Add 1 ear sweet corn (removed from cob), 1 yellow squash (diced) and 1 cup cherry tomatoes, and sauté until lightly browned (10-12 minutes).
- Meanwhile, prepare mac and cheese according to package directions.
- Combine mac and cheese with sautéed vegetables. Portion into individual bowls and top with sliced peaches, torn fresh basil and a sprinkling of pistachios.
