Real Meals: Franks and Beans with Sweet Potatoes

This week’s inspiration is a hearty comfort-food classic: Franks and Beans. The addition of sweet potatoes lends great flavor and nutrition. Have it on your table in just 3 steps!

Franks and Beans Kimberton Whole Foods

  1. Heat oil in a large pot over medium-high heat. Add 1/2 diced onion and 2 slices diced bacon, and cook until browned, about 10 minutes.
  2. Stir in 2 14-oz cans white beans (drained and rinsed), 2 cups peeled and diced sweet potato, 6 hot dogs (sliced 1/4 inch thick), and 1 cup of barbecue sauce. Simmer gently, covered, for about 35 minutes, until sweet potatoes are tender.
  3. Uncover and simmer another 10 minutes to allow the sauce to thicken. Excellent served with a side of rice or your favorite KWF deli salad! (Cole Slaw pictured here.)
