Real Meals: Sausage and Kale Soup

  1. In a Dutch oven over medium-low heat, cook 1 package Thousand Hills beef sausages (sliced 1/4 inch thick), 3 medium potatoes (chopped) and 2 onions (chopped) in 2 tbsp oil for 5 minutes, stirring occasionally.
  2. Add 1 bunch kale (trimmed and torn); cover and cook for 2-3 minutes or until kale is wilted. Add 4 garlic cloves (minced); cook 1 minute longer.
  3. Add 2 bay leaves, 1 can diced tomatoes (undrained), 1 can chickpeas (rinsed and drained), and 1 quart chicken broth. Season with salt and pepper.
  4. Bring to a boil. Reduce heat; cover and simmer for 9-12 minutes or until potatoes are tender. Discard bay leaves and serve.
